It is defined by four classic pastas - Carbonara, Cacio e Pepe, Amatriciana, and Gricia - often utilizing guanciale (pork jowl), Pecorino Romano cheese, and fresh seasonal vegetables like Roman artichokes.

Florentine cuisine isa rustic, "poor cooking" (cucina povera) tradition centered on unsalted bread, beans, olive oil, and hearty meats like Bistecca alla Fiorentina (thick T-bone steak) and lampredotto (tripe). Signature dishes include ribollita (vegetable/bread soup), pappa al pomodoro, and crostini with chicken liver pâté, often paired with Chianti wine.
